Ingredients

Chia Overnight Oats
  • 2 cups rolled oats
  • 4 tbsp chia seeds
  • 3 cups unsweetened almond milk or oat milk
  • 4 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
Berry Compote
  • 2 cups mixed frozen berries blueberries, raspberries, strawberries
  • 2 tbsp maple syrup
  • 1 tsp lemon zest
Toppings
  • 4 tbsp almond butter or peanut butter
  • 4 tbsp granola for crunch

Equipment

  • 4 Mason Jars (16 oz)
  • Small Saucepan

Method

  1. In a large bowl, mix oats, chia seeds, milk, maple syrup, vanilla, and cinnamon until well combined. Divide evenly between 4 mason jars.
  2. Seal jars and refrigerate overnight (or for at least 6 hours). The oats will thicken and absorb the milk.
  3. Make the berry compote: combine berries and maple syrup in a small saucepan over medium heat. Cook for 5 minutes, stirring occasionally, until berries break down into a thick sauce. Stir in lemon zest and let cool. Store in the fridge.
  4. In the morning, give oats a stir and add a splash of milk if they are too thick. Top with berry compote, a spoonful of almond butter, and a sprinkle of granola. Enjoy cold or microwave for 90 seconds for a warm version.

Notes
